This is my GOTO picking spice recipe. The smell, compared to storebought spice mix, will knock your socks off. If you do not have the whole spice, yes, you can use ground; the ratio is 1 Tbs Fresh Herb : 1 tsp Ground Herb.

PICKLING SPICE MIX

Yield: approximately 1/2 cup

  • 1 cinnamon stick – 4 inches
  • 5 Bay Leaves
  • 2 Tbs Mustard Seeds
  • 1 Tbs Black Peppercorns
  • 1 Tbs whole Allspice
  • 1 Tbs Coriander Seeds
  • 1 Tbs Dill Seeds
  • 1 Tbs Ground Ginger
  • 2 tsp Cardamom Seeds
  • 1 tsp whole Cloves
  • 1 tsp Hot Pepper Flakes
  1. Break the cinnamon stick into smaller pieces, then place into a spice grinder (this is the one I use).
  2. Place the rest of the ingredients into the spice grinder.
  3. Pulse the grinder a few times, you do not want everything to become powder.
  4. Using a canning jar funnel, pour into a mason jar, seal with an airtight lid.
  5. Label and write the date on the jar. Store in a cool dark place, cupboard is fine, for up to 1 year.
